Meal Deals: Eggs Benedict

Breakfast foods can be hearty and cheap. That was the inspiration for Chef David Pantone with the Florida Culinary Institute. With his recipe of a large ham steak and eggs benedict you can feed your family for just $2.75 a serving.
Quick Eggs Benedict
Recipe for 1 person, multiple as needed. One packet of Hollandaise Sauce is good for six people.
1 English muffin, split, lightly toasted
2 slices Canadian bacon
1 teaspoon butter or oil for frying egg
2 eggs
2 tablespoons pre-made hollandaise
Salt and pepper to taste
1 Package of Hollandaise Sauce Mix. Prepare as directed on package.
In a small skillet over medium heat, warm Canadian bacon. Remove from pan and place on top of warm English muffins. Fry eggs as you like. Place eggs on top of Canadian bacon. Top with some hollandaise sauce. Season with salt and pepper.
