Meal Deals: Short Ribs

Chief David Pantone with the Florida Culinary Institute teaches us how to cook fast and save cash. A beef short rib can be tough. You either cook it very slowly which will take all day or you can use a pressure cooker. In 45 minutes it becomes extremely tender.
Per serving this meal will only cost you about 2 dollars.
Fast Cooked Beef Short Ribs - Pressure Cooker
1 tablespoon oil
4 short beef short ribs, seasoned with salt and pepper
2 large onions, cut in half and sliced thin
2 cloves garlic, minced
2 - 14 ounce cans of beef stock
Preheat pressure heater over medium-high heat. Add oil. Add short ribs and brown on all sides. Add onions and garlic and cook for about two minutes. Add stock and bring to a boil. Secure lid on pressure cook and cook for 45 minutes. Turn off heat and let rest for several minutes, or until all pressure has escaped. Remove lid and serve.
Optional: After cooking, sauce may be thickened with cornstarch, arrowroot, or a flour and water mixture.
