Sometime when you do things slow you can get ahead. That's true when it comes to saving money on buying meat.
Chief David Pantone is with the Florida Culinary Institute. He says if we cook slow we can make some fast cash or at least save some cash.
By using a seven bone chuck roast at $2.49 a pound you can stay on budget. It's one of the least expensive cuts, but It would be really tough if we tried to grill it like a stake. Instead put it in a slow cooker for 4 hours on high or 8 or 10 hours on low. The slow cooking breaks down all of the connective tissue and makes it tender.
With all the ingredients this meal can food your family for only $2.25 a serving.
Seven Bone Chuck - Slow Cooker Pot Roast
1 tablespoon oil
1 seven bone chuck pot roast
2 medium onions, large dice
4 carrots, peeled, large dice
4 stalks celery, peeled, large dice
2 - 14 ounce cans beef stock
Season meat with salt and pepper on both sides. Heat oil in a large skillet and brown meat on both sides. Place meat in slow cooker. Add onions to hot skillet and stirring constantly cook for about 3 minutes. Add carrots, celery, and stock. Bring to a boil. Remove from heat and pour all into the slow cooker. Cover and set slow cooker for 4 hours on high setting or 8 hours on low setting.
Optional: After cooking, sauce may be thickened with cornstarch, arrowroot, or a flour and water mixture.
